Got Syrup?!

I bought a new stove about three years ago. An electric stove. I was excited to start the canning season. However, the first batch of wild grape jelly ended up being syrup...then I had elderberry syrup instead of jelly...hmmm.
It finally occured to me to check the temperature with a jelly thermometer. My new stove does not reach the jelling point. No matter how long I cook the liquid.
I've learned to make friends with local jelly makers. In exchange for sharing whatever I harvest, I get jelly...and I return their jars full of syrups lol
