When making Jelly you want it to be firm enough to hold its shape, but tender enough to spread easily. Jelly is made by cooking a clear juice with the appropriate quantity of sugar, pectin and acid. If your schedule does not allow for you to make the Jelly during fruit harvest, then you can always freeze the juice and create the jelly at another time.
